Salada de rúcula com mozarela e vegetais grelhados

Doses: 2 Tempo: 1h Preparação: lume Dificuldade: média

Ingredientes:


  • Beringela (1/2)
  • Curgete (1)
  • Pimento amarelo (1)
  • Mozarela (2)
  • Abacate (1)
  • Rúcula (50g)
  • Pimenta vermelha em flocos
  • Limão (1)
  • Azeite
  • Vinagre balsâmico
  • Sal marinho
  • Pimenta preta

Preparação:


Comece por lavar e fatiar a beringela e a curgete. Leve as fatias a grelhar numa chapa em lume brando. Grelhe de forma uniforme ambos os lados.

De seguida faça o mesmo para o pimento (pode grelhar inteiro e fatiar depois).

Corte a mozarela e abacate em cubos.

Lave a rucúla, e quando os vegetais grelhados estiverem frios, junte tudo numa tigela grande.

Tempere com sumo de limão, flocos de pimenta, azeite, vinagre balsâmico, sal e pimenta.

Consuma de seguida (não aconselho deixar de um dia para o outro). Bom apetite! :)

Grilled vegetable salad with rucola and mozzarella

Ingredients:


  • Aubergine (1/2)
  • Zucchini (1)
  • Yellow pepper (1)
  • Avocado (1)
  • Mozzarella (2)
  • Rucola (50g)
  • Chilli flakes
  • Lemon (1)
  • Olive oil
  • Balsamic vinegar
  • Marine salt
  • Freshly grounded pepper

Preparation:


Start by washing and slicing the aubergine and zucchini. Take it to grill with no oil, on low heat. Cook evenly on both sides.

Wash the pepper. Grill it the same way (but you can cook it as a whole and slice it after).

Dice the avocado and mozzarella. Wash the rucola.

Once the grilled vegetables are cold, add everything on a large bowl and season with chilli flakes, lemon juice, a bit of olive oil, balsamic vinegar, salt and pepper.

Serve it right away (I don't recommend keeping this dish overnight). Enjoy! :)

Chamuças mexicanas

Doses: 1 Tempo: 1h Preparação: lume e forno Dificuldade: fácil

Ingredientes:


  • Soja miúda (1 xícara)
  • Cebola (1)
  • Alho (3 dentes)
  • Malaguetas (a gosto)
  • Louro (2)
  • Azeite
  • Pimento vermelho (2)
  • Vinho tinto
  • Coentros frescos
  • Sal marinho
  • Pimenta preta
  • Paprika 
  • Cominhos em pó
  • Feijão preto (1 xícara)
  • Tortillas de milho (3)
  • Leite vegetal (1/2 copo)

Preparação:


Demolhe a soja até que incha e depois escorra-a. Reserve.

Descasque e pique a cebola e os alhos. 

Leve uma frigideira grande a aquecer em lume médio, com a cebola, alho, malaguetas, o louro e um fio de azeite.

Quando a cebola estiver translúcida, acrescente a soja e envolva.

Entretanto lave e corte os pimentos. Adicione ao refogado, assim como um pouco de vinho tinto.

Vá mexendo e deixe apurar.

Pique os coentros e junte à frigideira, assim como aos restantes temperos.

Por fim adicione o feijão previamente cozido. Envolva e desligue o lume.

Para preparar as chamuças, corte 2 triângulos de uma tortilla. De seguida coloque uma tortilla inteira no prato, no centro coloque 3 colheres de sopa do recheio de soja, feijão e pimentos, e por cima coloque um dos triângulos. Pincele o triângulo e os cantos da primeira tortilla e dobre os cantos de forma a criar a chamuça. Faça o mesmo para a chamuça seguinte.

Leve ao forno durante 15 minutos a 200º.

Sirva acompanhado de guacamole. Bom apetite!

Mexican samosas

Portions: 1 Time: 1h Preparation: stove and oven Difficulty level: easy

Ingredients:


  • Grated dry soy (1 cup)
  • Onion (1)
  • Garlic (3 cloves)
  • Chilli peppers
  • Bayleaf (2)
  • Olive oil
  • Red bell pepper (1)
  • Red wine
  • Fresh cilantro
  • Sea salt
  • Freshly grounded pepper
  • Paprika
  • Grounded cumin
  • Black beans (1 cup)
  • Corn tortilla (3)
  • Plant-based milk (1/2 glass)


Preparation:



Boil the soy for 10 minutes. Drain it and keep it.

Peel and chop up the onion and garlic. Add it to a large frying pan, on medium heat, with a bit of olive oil, the chilli peppers and the bayleaves. 

Then add the soy and stir occasionally.

Meanwhile, wash and chop the pepper. Add it to the pan, and a bit of red wine.

Chop also the cilantro and add it, as well as the rest of the spicies.

Finally, when everything is cooked through add the beans.

For the samosas, take a tortilla and cut two triangles. Then put a whole tortilla on a plate, add 3 tablespoons of the beans and soy mix in the center, and on top put one of the triangles.

Brush some milk on the triangle and on the corners of the tortilla and fold the edges around the triangle.

Take the samosas to the oven for 15 minutes at 200º.

Serve with guacamole. Enjoy!

Salada de espinafres, melancia e queijo feta

Ingredientes:


  • Cebola roxa (1/2)
  • Espinafres (150g)
  • Manjericão fresco (20g)
  • Melancia (1/4)
  • Queijo feta (100g)
  • Nozes (50g)
  • Vinagre balsâmico

Preparação:


Descasque e corte a cebola em pedacinhos.

Lave e escorra os espinafres e as folhas de manjericão.

Corte a melancia em cubos, retirando as sementes.

Corte o queijo feta também em cubos.

Junte tudo numa taça grande, junte as nozes e tempere com vinagre balsâmico.

Spinach, watermelon and feta cheese salad

Portions: 2 Time: 10min Preparation: not needed Difficulty level: as easy as it gets

Ingredients:

  • Red onion (1/2)
  • Spinach (150g)
  • Fresh basil (20g)
  • Watermelon (1/4)
  • Feta cheese (100g)
  • Walnuts (50g)
  • Balsamic vinegar

Preparation:


Peel and chop the onion.

Wash the spinach and the basil.

Cut the watermelon in cubes and take away all the seeds.

Chop the feta cheese into bite-size pieces.

Finally, put everything together in a bowl, add walnuts and season with balsamic vinegar. 

Serve cold. Enjoy! :)

Douradinhos de tofu

Doses: 2 Tempo: 15min Preparação: lume Dificuldade: fácil

Ingredientes:


  • Tofu (200g)
  • Sumo de limão
  • Coentros
  • Alho em pó
  • Sal marinho
  • Pimenta preta
  • Farinha (~ 5 colheres de sopa)
  • Pão ralado (~ 5 colheres de sopa)
  • Ovos de galinhas felizes (3 pequenos)
  • Azeite/óleo para fritar

Preparação:


Comece por cortar o tofu em pedaços (mais ou menos da largura de douradinhos). Coloque-os numa taça e tempere com sumo de limão, coentros, alho em pó, sal e pimenta (se possível faça este passo umas horas antes para que o tofu marine).

Prepare três pratos fundos, um com farinha, outro com pão ralado, e no último parta os três ovos e mexa com ajuda de um garfo.

Entretanto, coloque uma panela com azeite ou óleo a aquecer.

Passe os pedaços de tofu pelo ovo, depois pela farinha e por fim pelo pão ralado, envolvendo completamente. Coloque-os a fritar e vá virando até ficar homogeneamente dourados. 

Sirva com um pouco de molho de soja e uma salada verde. Bom apetite! :)

Tofu fingers

Portions: 2 Time: 15min Preparation: stove Difficulty level: easy

Ingredients:

  • Tofu (200g)
  • Lemon juice
  • Cilantro
  • Powdered garlic
  • Sea salt
  • Freshly ground pepper
  • Flour (~5 tablespoons)
  • Dry bread crumbs (~5 tablespoons)
  • Happy chickens' eggs (3, small)
  • Oil/olive oil

Preparation:


Cut the tofu into rectangles like in the picture. Marinate it with lemon juice, cilantro, garlic, salt and pepper (it will taste even better if it's marinating for a couple of hours).

Prepare 3 soup dishes: one with flour, another with the dry bread crumbs, and the last one with the 3 eggs whisked.

Meanwhile, put the oil to heat up on a large pan.

Pass the tofu pieces through the eggs, then the flour and finally the bread crumbs.

Let it fry evenly until golden brown.

Serve it with a bit of soy sauce and a green salad. Enjoy! :)

Salada de espinafres e grão tostado

Doses: 2 Tempo: 20min Preparação: forno Dificuldade: mais fácil é impossível

Ingredientes:


  • Grão cozido (400g)
  • Azeite
  • Paprika em pó
  • Pimenta preta
  • Alho em pó
  • Coentros (frescos ou secos)
  • Limão (1)
  • Espinafres frescos (~150g)

Preparação:


Passe o grão cozido por água com ajuda de um escorredor.

Numa travessa de ir ao forno passe um guardanapo com um fio de azeite e cubra toda a área.

De seguida disponha o grão já seco e tempere com outro fio de azeite, paprika, pimenta, alho, coentros e sumo de um limão.

Leve a travessa ao forno a 250º durante 15 minutos ou até ficar dourado.

Entretanto, lave e escorra os espinafres. Disponha-os em dois pratos.

Quando o grão estiver pronto, deixe arrefecer e passe-os para os pratos.

Se precisar, adicione mais azeite, sumo de limão ou especiarias.

Roast chickpeas and fresh spinach salad

Portions: 2 Time: 20min Preparation: oven Difficulty level: as easy as it gets

Ingredients:

  • Dried chickpeas (400g)
  • Olive oil 
  • Powdered paprika
  • Powdered garlic
  • Freshly grounded pepper
  • Cilantro (fresh or dried)
  • Lemon (1)
  • Fresh spinach leaves (~150g)

Preparation:


Wash the chickpeas and let it dry.

Pass a napkin with a bit of olive oil on an oven tray and cover all the area.

Place the dried chickpeas in the tray and season it with a bit more olive oil, paprika, garlic, pepper, cilantro and lemon juice.

Take it to the oven on 250º for about 15min or until golden brown.

Meanwhile, wash the spinach leaves and place them of two plates.

Once the chickpeas are ready, let it cool down and if necessary add a bit more spices or lemon juice.

Once cold, add it to the plates. Enjoy! :)

Cuscuz arco-íris

Doses: 6 Tempo: 30min Preparação: lume Dificuldade: mais fácil é impossível

Ingredientes:


  • Cuscuz (2 copos)
  • Cenouras (4)
  • Brócolos (1 ramo)
  • Pimentos (1 de cada cor)
  • Tangerinas (4)
  • Cebola roxa (1)
  • Passas
  • Sementes para salada
  • Azeite
  • Limão

Preparação:


Cozinhe o cuscuz de acordo com as instruções no pacote. Deixe arrefecer.

Entretanto, descasque e corte as cenouras.

De seguida, lave os brócolos e os pimentos. 

Corte o caule dos brócolos e mantenha só os floretes. 

Corte os pimentos em pequenas fatias.

Descasque as tangerinas e divida em gomos.

Por fim, descasque e corte a cebola em meias luas.

Junte tudo ao cuscuz frio, adicione as sementes e as passas, e tempere com azeite e sumo de limão.

Rainbow couscous

Portions: 6 Time: 30min Preparation: stove Difficulty level: as easy as it gets

Ingredients:

  • Couscous (2 cups)
  • Carrots (4)
  • Broccoli
  • Peppers (1 of each colour)
  • Tangerines (4)
  • Red onion (1)
  • Raisins
  • Seeds
  • Olive oil
  • Lemon juice

Preparation:


Cook the couscous according to package instructions. Let it cool down.

Peel and cut the carrots into small pieces.

Wash the broccoli and peppers.

Cut the broccoli into florets and the peppers into bite-size pieces.

Peel the tangerines and separate the buds.

Finally, peel and cut the onion into bite-size pieces.

Put everything in a large bowl, add some seeds and raisins, and the cold couscous.

Season it with olive oil and lemon juice. Enjoy!

Tosta mista low-carb

Doses: 2 Tempo: 20min Preparação: lume Dificuldade: fácil

Ingredientes:


  • Beringela (1 média - as redondas são mais convenientes)
  • Ovos de galinhas felizes (3 pequenos)
  • Farinha (~ 5 colheres de sopa) - OPTATIVO
  • Pão ralado (~ 5 colheres de sopa)
  • Fiambre vegan (100g)
  • Queijo vegan (100g - usei Violife em fatias)
  • Azeite ou óleo
  • Pimenta preta
  • Orégãos

Preparação:


Comece por lavar e cortar a beringela em fatias (mais ou menos 1cm de grossura).

Parta os ovos para uma taça e mexa-os com ajuda de um garfo. 

Prepare outras duas taças individuais, uma com farinha e outra com pão ralado.

Junte pimenta e orégãos a gosto à taça com pão ralado e envolva.

Faça pequenas "sandes" com duas fatias de beringela, e uma fatia de fiambre e outra de queijo no meio.

Aqueça azeite ou óleo numa frigideira grande. 

Antes de colocar as "sandes" a fritar, passe-as pela taça dos ovos, depois da farinha, e por fim, do pão ralado, envolvendo-as sempre completamente.

Frite as "sandes" de ambos os lados, até adquirirem um tom dourado.

Sirva com uma salada fresca. Bom apetite! :)

Low carb grilled ham and cheese

Portions: 2 Time: 20min Preparation: stove Difficulty level: easy

Ingredients:

  • Eggplant (1 medium - the round ones are more convenient)
  • Happy chickens' eggs (3 small)
  • Flour (~ 5 tablespoons) - optative 
  • Dry breadcrumbs (~ 5 tablespoons)
  • Vegan ham (100g)
  • Vegan cheese (100g)
  • Oil/Olive oil 
  • Freshly ground pepper
  • Oregano

Preparation:


Wash and slice the eggplant (the slices should have around 1cm of length).

Break the eggs into a bowl and stir them.

Prepare two other bowls, one with flour and the other with breadcrumbs. Add pepper and oregano to the second one.

Then, do little "sandwiches" with take 2 pieces of eggplant and a slice of ham and another of cheese in the middle.

Put oil or olive oil to heat in a large frying pan. Before putting the little "sandwiches" to fry, pass them through the bowl with eggs, then flour, then breadcrumbs.

Fry the "sandwiches" on both sides until golden brown.

Serve it with a fresh salad. Enjoy! :)
