Cuscuz arco-íris

Doses: 6 Tempo: 30min Preparação: lume Dificuldade: mais fácil é impossível

Ingredientes:


  • Cuscuz (2 copos)
  • Cenouras (4)
  • Brócolos (1 ramo)
  • Pimentos (1 de cada cor)
  • Tangerinas (4)
  • Cebola roxa (1)
  • Passas
  • Sementes para salada
  • Azeite
  • Limão

Preparação:


Cozinhe o cuscuz de acordo com as instruções no pacote. Deixe arrefecer.

Entretanto, descasque e corte as cenouras.

De seguida, lave os brócolos e os pimentos. 

Corte o caule dos brócolos e mantenha só os floretes. 

Corte os pimentos em pequenas fatias.

Descasque as tangerinas e divida em gomos.

Por fim, descasque e corte a cebola em meias luas.

Junte tudo ao cuscuz frio, adicione as sementes e as passas, e tempere com azeite e sumo de limão.

Sirva frio. Bom apetite! :)

Rainbow couscous

Portions: 6 Time: 30min Preparation: stove Difficulty level: as easy as it gets

Ingredients:

  • Couscous (2 cups)
  • Carrots (4)
  • Broccoli
  • Peppers (1 of each colour)
  • Tangerines (4)
  • Red onion (1)
  • Raisins
  • Seeds
  • Olive oil
  • Lemon juice

Preparation:


Cook the couscous according to package instructions. Let it cool down.

Peel and cut the carrots into small pieces.

Wash the broccoli and peppers.

Cut the broccoli into florets and the peppers into bite-size pieces.

Peel the tangerines and separate the buds.

Finally, peel and cut the onion into bite-size pieces.

Put everything in a large bowl, add some seeds and raisins, and the cold couscous.

Season it with olive oil and lemon juice. Enjoy!

Tosta mista low-carb

Doses: 2 Tempo: 20min Preparação: lume Dificuldade: fácil

Ingredientes:


  • Beringela (1 média - as redondas são mais convenientes)
  • Ovos de galinhas felizes (3 pequenos)
  • Farinha (~ 5 colheres de sopa) - OPTATIVO
  • Pão ralado (~ 5 colheres de sopa)
  • Fiambre vegan (100g)
  • Queijo vegan (100g - usei Violife em fatias)
  • Azeite ou óleo
  • Pimenta preta
  • Orégãos

Preparação:


Comece por lavar e cortar a beringela em fatias (mais ou menos 1cm de grossura).

Parta os ovos para uma taça e mexa-os com ajuda de um garfo. 

Prepare outras duas taças individuais, uma com farinha e outra com pão ralado.

Junte pimenta e orégãos a gosto à taça com pão ralado e envolva.

Faça pequenas "sandes" com duas fatias de beringela, e uma fatia de fiambre e outra de queijo no meio.

Aqueça azeite ou óleo numa frigideira grande. 

Antes de colocar as "sandes" a fritar, passe-as pela taça dos ovos, depois da farinha, e por fim, do pão ralado, envolvendo-as sempre completamente.

Frite as "sandes" de ambos os lados, até adquirirem um tom dourado.

Sirva com uma salada fresca. Bom apetite! :)

Low carb grilled ham and cheese

Portions: 2 Time: 20min Preparation: stove Difficulty level: easy

Ingredients:

  • Eggplant (1 medium - the round ones are more convenient)
  • Happy chickens' eggs (3 small)
  • Flour (~ 5 tablespoons) - optative 
  • Dry breadcrumbs (~ 5 tablespoons)
  • Vegan ham (100g)
  • Vegan cheese (100g)
  • Oil/Olive oil 
  • Freshly ground pepper
  • Oregano

Preparation:


Wash and slice the eggplant (the slices should have around 1cm of length).

Break the eggs into a bowl and stir them.

Prepare two other bowls, one with flour and the other with breadcrumbs. Add pepper and oregano to the second one.

Then, do little "sandwiches" with take 2 pieces of eggplant and a slice of ham and another of cheese in the middle.

Put oil or olive oil to heat in a large frying pan. Before putting the little "sandwiches" to fry, pass them through the bowl with eggs, then flour, then breadcrumbs.

Fry the "sandwiches" on both sides until golden brown.

Serve it with a fresh salad. Enjoy! :)

Salada de bagas e halloumi

Doses: 2 Tempo: 30min Modo de preparação: lume Dificuldade: mais fácil é impossível


Ingredientes:


  • Queijo halloumi (250g)
  • Agrião (150g)
  • Framboesas (125g)
  • Mirtilos (125g)
  • Pepino (1)
  • Molho para salada (o meu favorito é de vinagre balsâmico, azeite, mostarda e mel)


Preparação:


Comece por cortar o halloumi em fatias (não demasiado finas). 

Leve uma frigideira antiaderente a aquecer em lume médio, sem adicionar nenhuma gordura. Junte as fatias de halloumi.

O queijo irá borbulhar um pouco ao início, e quando a "espuma" começar a diminuir, vire as fatias para que cozinhem do lado oposto (o segundo lado cozinha mais rapidamente). Estará pronto quando a superfície estiver dourada.

Uma vez pronto, retire o queijo do lume e deixe-o arrefecer.

Entretanto, lave o agrião e as frutas.

Descasque e fatie também um pepino.

Junte tudo numa taça grande e tempere a gosto. Sirva frio.

Halloumi and berries salad

Portions: 2 Time: 30min Preparation: stove Difficulty level: as easy as it gets


Ingredients:

  • Halloumi cheese (250g)
  • Watercress (150g)
  • Raspberries (125g)
  • Blueberries (125g)
  • Cucumber (1)
  • Salad dressing (my favourite is balsamic vinegar, olive oil, mustard and honey)

Preparation:


Slice the halloumi (try to not have very thin slices). Add them to a frying pan, and let it cook on medium heat (there's no need for any oil).

The cheese will release some liquid, so just wait for the "bubbling" to stop before you flip the slices.

The first side will be ready when it looks golden brown. Flip all the slices, but expect the second half to cook quicker.

Once it's ready, take it from the pan and let it cool down.

Meanwhile, wash the water cress and the berries.

Peel and slice the cucumber as well.

Add everything to a large bowl and dress it as you like it.

Serve it cold. Enjoy!
