Estufado de soja com batatas e ervilhas

Doses: 4 Tempo: 45min Preparação: lume Dificuldade: fácil

Ingredientes:


  • Soja grossa (200g)
  • Batatas (3 médias)
  • Cebola (1 média)
  • Alho (2 dentes)
  • Louro (2 folhas)
  • Azeite
  • Molho de tomate (a gosto)
  • Ervilhas (100gr)
  • Sal marinho
  • Pimenta preta

Modo de Preparação:


Comece por colocar a soja dentro de um recipiente com água para que absorva.

Entretanto, descasque e corte as batatas em cubos. Reserve.

Descasque e corte também a cebola e o alho. Coloque-os numa panela com o azeite e o louro e deixe cozinhar em lume baixo, mexendo ocasionalmente.

Entretanto retire a soja da água, e quando a cebola estiver translúcida, acrescente-a à panela, assim como ao molho de tomate, sal e pimenta.

Quando a soja tiver fritado ligeiramente, junte as batatas e um copo de água.

Quando as batatas estiverem a ponto de estarem prontas, acrescente as ervilhas e envolva.

Deixe cozinhar mais um pouco e sirva ainda quente. Bom apetite! :)

Soy meat stew with potatoes and peas

Ingredients:


  • Dry soy meat (200g)
  • Potatoes (3)
  • Onion (1)
  • Garlic (2 cloves)
  • Bayleaf (2)
  • Olive oil
  • Tomato sauce
  • Peas (100g)
  • Marine salt
  • Freshly grounded pepper


Preparation:


Start by putting the soy meat in a bowl with water. Then peel and dice the potatoes. Reserve.

Peel and chop also the onion and garlic. Put it in a pot with a bit of olive oil and the bayleaf, and let it cook on low heat, stirring occasionally.

Meanwhile, take the soy from the water and add it to the pan. Add also the tomato sauce and season with salt and pepper.

Once the soy has fried a bit, add the potatoes and a glass of water.

When the potatoes are almost ready, add the peas and let it cook for a bit more.

Serve hot. Enjoy!

Montinhos de beringela, tomate e queijo

Doses: 2 Tempo: 30min Preparação: lume e forno Dificuldade: fácil


Ingredientes:


  • Beringela (1 grande)
  • Azeite
  • Mozarela (1)
  • Tomates (3 médios)
  • Pesto (a gosto)
  • Sal marinho
  • Pimenta preta


Modo de Preparação:


Comece por lavar e cortar a beringela em rodelas (não muito grossas). Entretanto, coloque uma frigideira larga a aquecer em lume baixo e um fio de azeite.

Quando a frigideira aquecer disponha as rodelas de beringela e cozinhe de forma homogénea ambos os lados. Tempere com sal e pimenta.

À medida que as rodelas vão ficando prontas, retire-as da frigideira e disponha numa travessa larga. Fatie a mozarela em fatias fininhas e coloque uma fatia por cima de rodela de beringela.

Lave e corte os tomates também em rodelas. Adicione uma fatia de tomate por cima de cada montinho de beringela e mozarela, e uma colher de chá de pesto, respectivamente.

Para terminar acrescente uma fatia final de mozarela a cada montinho. Leve ao forno até o queijo estar derretido (cerca de 10 minutos a 250º).

Breadless aubergine, tomato and mozarela sandwiches

Ingredients:


  • Aubergine (1)
  • Olive oil
  • Mozzarella (1)
  • Tomatoes (3)
  • Pesto
  • Marine salt
  • Freshly ground-pepper


Preparation:


Wash and slice the aubergine. Put the slices on a large frying pan, on low heat, with a bit of olive oil. Cook evenly on both sides. Season with salt and pepper.

Meanwhile, wash and slice the tomatoes, and slice also the mozzarella.

Place the cooked slices of aubergine on an oven tray. On top of each slice and a thin slice of mozzarella, a slice of tomato, a teaspoon of pesto, and another slice of mozzarella.

Put the tray in the oven for about 10 minutes at 250º (until the cheese melts).

Tofu à Gomes de Sá

Ingredientes: 

  • Tofu (200gr)
  • Limão (1 grande)
  • Salsa (1/2 ramo)
  • Louro (1 folha)
  • Batatas (4 médias)
  • Ovos (4)
  • Cebola (2 médias)
  • Azeite
  • Sal
  • Pimenta

Modo de Preparação:


Antes de começar a preparar o prato:

Comece por fazer uma marinada para o tofu. 

Corte o tofu em pequenos cubos e coloque-os numa tigela com sal, pimenta e sumo de limão. Pique metade da salsa e coloque também na marinada, assim como à folha de louro. 

Com quanta mais antecedência fizer a marina melhor (p.ex. de um dia para o outro).

Para preparar o prato:

Coloque uma panela grande com água a aquecer. Lave as batatas e coloque-as na panela, assim como aos ovos, e deixe levantar fervura para que possam cozer. Tempere com sal.

Entretanto descasque e parta uma das cebolas. Coloque-a numa frigideira, com um fio de azeite e o conteúdo da marina, para refogar ligeiramente o tofu.

Quando as batatas estiverem semi-cozidas desligue o lume. Parta as batatas em cubos pequenos (preferencialmente mantenha a casca). Descasque os ovos e parta em cubos também.

Por fim, corte a outra cebola e pique o resto da salsa.

Coloque numa grande travessa o tofu refogado, as batatas e os ovos cortados, a cebola e a salsa. 

Ajuste de sal, pimenta e sumo de limão. 

Regue com azeite e leve ao forno durante 15 minutos a 200º.

Sirva com uma salada verde. Bom apetite! :)

Portuguese tofu "à Gomes de Sá"

Ingredients:

  • Tofu (200g)
  • Lemon (1)
  • Parsley 
  • Bayleaf (1)
  • Potatoes (4)
  • Happy chickens' eggs (4)
  • Onions (2)
  • Olive oil
  • Freshly grounded pepper
  • Marine salt

Preparation:


Start by dicing the tofu. Put the cubes in a bowl and season it with lemon juice, fresh chopped parsley, a bayleaf, salt and pepper. The earlier you put the tofu to marinate the better (I recommend doing it one day in advance and keep it in the fridge).

To start the actual dish, boil the potatoes and eggs for 10 minutes. Then, wait for it to be cold and dice the potatoes and slice the eggs.

Meanwhile, chop the onion and add it to a frying pan with a bit of olive oil. Then add the marinated tofu with its juices.

Once the tofu is slightly fried, pass it to an oven tray, add the chopped potatoes and eggs, and season with a bit more olive oil, lemon juice, salt, pepper, and fresh parsley. Add also some raw chopped onion.

Take to the oven for 15 minutes at 200º.

Serve it with a green salad. Enjoy!

Feijoada de Cogumelos

Ingredientes:

  • Cebola (1 grande)
  • Dentes de alho (2 médios)
  • Azeite
  • Louro (1 folha)
  • Tomate (1 médio)
  • Malaguetas (~2)
  • Cenouras (2 médias)
  • Chouriço de soja (1/2 embalagem)*
  • Cogumelos frescos (200gr)
  • Salsa (1/2 de um ramo pequeno)
  • Feijão branco cozido (500g)
  • Sal marinho

Preparação:


Comece por descascar e picar a cebola e o alho. Leve a refogar numa panela grande, com um fio de azeite e uma folha de louro, em lume brando.

Enquanto espera pela cebola estar translúcida, corte o tomate e as malaguetas. Adicione ao refogado.

Entretanto, descasque e corte as cenouras, e adicione também.

Depois, corte o chouriço em fatias, lave e corte os cogumelos, pique a salsa, junte tudo ao refogado.

Tempere com sal, envolva e acrescente água suficiente para cobrir todo o preparado.

Deixe cozer e ocasionalmente. Verifique se é necessário mais água e se está bom de sal.

Quando o preparado estiver quase pronto, acrescente o feijão cozido. Envolva e deixe levantar fervura.

Sirva bem quente. Bom apetite! :)

Typical Portuguese bean stew with mushrooms

Ingredients:



  • Onion (1, big)
  • Garlic (2 cloves)
  • Olive oil
  • Bayleaf
  • Tomato (1)
  • Chilli peppers (~2)
  • Carrots (2)
  • Veggie chorizo (100g)
  • Fresh mushrooms (200g)
  • Fresh parsley
  • Boiled white beans (500g)
  • Sea salt


Preparation:


Peel and chop up the onion and garlic. Place them on a big pot with a bit of olive oil and bayleaf, and let it cook on low heat.

Meanwhile, wash and chop the tomato. Chop also the chilli peppers. Add both to the pot.

Peel and cut the carrots into pieces and add it to the pot as well.

Then, slice the chorizo, wash and chop up the mushrooms, and add both to the pot.

Wash and chop up the parsley. Add it to the pot and season everything with salt.

While everything cooks, add water occasionally so it doesn't run dry.

Once everything is cooked through add the beans and mix together.

Serve hot. Enjoy!

Massa com seitan e ananás 

Doses: 3 Tempo: 30min Preparação: lume Dificuldade: fácil

Ingredientes:


  • Cebola (1 média)
  • Alho (2 dentes)
  • Louro
  • Azeite
  • Seitan (1 embalagem - 300gr)
  • Ananás fresco (~200g)
  • Vinho branco
  • Massa (fettuccine ou outras)
  • Natas vegan
  • Sal marinho
  • Pimenta preta
  • Noz-moscada

Modo de Preparação:


Comece por descascar e picar a cebola e alho. Leve a refogar numa frigideira larga com um fio de azeite e uma folha de louro. Mantenha o lume brando.

Corte o seitan e o ananás em cubos do mesmo tamanho.

Coloque o seitan no refogado e acrescente vinho branco. Deixe cozinhar até o vinho evaporar. Tempere com sal, pimenta e noz-moscada.

Entretanto coloque uma panela com água a ferver para cozinhar o fettuccine.

Acrescente o ananás ao refogado e vá mexendo de vez em quando.

Quando o ananás já estiver quase cozinhado e deixar de libertar suco, acrescente as natas.

Envolva tudo e deixe cozinhar mais um pouco. 

Quando a massa estiver pronta, sirva. Bom apetite! :)

Pasta with seitan and pineapple

Portions: 3 Time: 30min Preparation: stove Difficulty level: easy


Ingredients:


  • Onion (1)
  • Garlic (2 cloves)
  • Olive oil
  • Bayleaf (1)
  • Seitan (300g)
  • Fresh pineapple (~200g)
  • White wine
  • Pasta (fettuccine or others)
  • Vegan cream
  • Sea salt
  • Freshly grounded pepper
  • Nutmeg

Preparation:


Start by peeling and chopping the onion and garlic. Add them to a large frying pan with a bit of olive oil and a bayleaf. Let it cook on low heat.

Meanwhile, cut the seitan and pineapple into cubes around the same size.

Add the seitan to the pan.

Season with salt, pepper and nutmeg and add some white wine.

Let it cook until the wine has evaporated, mixing occasionally.

Meanwhile, cook the pasta on a different pot.

Add the pineapple to the pan and let it cook until it released its juice.

Finally, add the cream and mix all together.

Serve hot with the pasta. Enjoy! :)

Cogumelos de Fricassé

Doses: 2 Tempo: 30min Preparação: lume Dificuldade: fácil


Ingredientes:

  • Cebola (1 média)
  • Margarina (3 colheres de sopa)
  • Cogumelos frescos/setas (400gr)
  • Salsa Picada
  • Batatas (4 médias)
  • Ovos de galinhas felizes (2 gemas)
  • Flor de sal
  • Pimenta preta

Modo de Preparação:


Comece por descascar e picar a cebola. Coloque-a num tacho em lume brando com a margarina.

Lave e corte os cogumelos e a salsa grosseiramente. 

Quando a cebola estiver translúcida, junte os cogumelos e a salsa ao refogado.

Descasque as batatas e parta em cubos de tamanho médio. Acrescente-as ao tacho, e tempere com sal e pimenta. Deixe refogar um pouco.

Junte um copo de água para que o preparado possa cozer.

Finalmente, parta os dois ovos, separe as gemas para uma taça, e bata. 

Quando o preparado já estiver pronto, acrescente as gemas ao refogado e envolva delicadamente.

Sirva ainda quente. Bom apetite!

Portuguese fricassee mushrooms

Ingredients:

  • Onion (1)
  • Margarine (3 tablespoons)
  • Fresh mushrooms (400g)
  • Fresh parsley
  • Potatoes (4)
  • Free range eggs (2 yolks)
  • Sea salt
  • Freshly grounded pepper

Preparation:


Peel and cut the onion. Put it in a deep pan, on low heat, with the margarine.

Meanwhile, wash and chop the mushrooms and parsley. Add it to the pan.

Peel and dice the potatoes. Add to the pan and season with salt and pepper. Stir.

Add a glass of water and turn the heat off once the potatoes are cooked through.

Break the eggs and separate the yolks. Add to the pan and stir it together.

Serve while hot. Enjoy! :)

Tofu salteado (massa chinesa caseira)


Doses: 3 Tempo: 40min Preparação: lume Dificuldade: fácil

Ingredientes:

  • Cebola (1 grande)
  • Cenouras (3 médias)
  • Alho (2 dentes)
  • Azeite
  • Tofu (200gr)*
  • Malaguetas (a gosto, cerca de 2)
  • Esparguete ou noodles 
  • Molho de soja (a gosto, cerca de 5 colheres de sobremesa)
  • Sumo de limão (a gosto, cerca de 3 colheres de sobremesa)
  • Sal marinho
  • Pimenta preta

Modo de Preparação:


Comece por descascar a cebola, as cenouras e os dentes de alho. Corte tudo e coloque numa frigideira (ou wok) grande com um fio de azeite, em lume brando.

Entretanto corte o tofu em cubos.

Quando a cebola estiver translúcida, acrescente o tofu e as malaguetas ao refogado. Tempere tudo com sal e pimenta.

Deixe cozinhar durante alguns minutos mexendo ocasionalmente. 

À parte, coloque um tacho com água a aquecer para fazer o esparguete/noodles.

Quando o tofu já tiver alourado, retire as malaguetas e tempere com o molho de soja e o sumo de limão.

Deixe cozinhar em lume baixo, mexendo de vez em quando, até o esparguete/noodles estar pronto.

Braised tofu (homemade spicy noodles)

Portions: 3 Time: 40min Preparation: stove Difficulty level: easy


Ingredients:


  • Onion (1)
  • Carrots (3)
  • Garlic (2 cloves)
  • Olive oil
  • Tofu (200g)
  • Chilli peppers 
  • Noodles
  • Soy sauce (~5 tablespoons)
  • Lemon juice (~3 tablespoons)
  • Marine salt
  • Freshly grounded pepper

Preparation:


Peel and chop the onion, garlic and slice the carrots. Put everything on a large frying pan or wok with a bit of olive oil, on low heat. Stir until the carrots are half way done.

Meanwhile, dice the tofu. Add it to the pan, as well as some chilli peppers.

Prepare a pan with boiling water for the execution of the noodles.

Finally, add the soy sauce, lemon juice, salt and pepper to the braised tofu. Let it cook on low heat until the noodles are ready.

Serve it hot. Enjoy! :)
