"Empadão" de batata-doce e lentilhas

Doses: 4 Tempo: 1h Preparação: microondas, fogão e forno Dificuldade: fácil


Ingredientes:

  • Batatas doce (2 médias)
  • Lentilhas (1/2 copo)
  • Caldo de vegetais (1)
  • Cebola (1 média)
  • Alho (1 dente)
  • Azeite
  • Louro
  • Cenouras (2 médias)
  • Cogumelos (~250g)
  • Aipo (1 caule)
  • Vinho tinto (2 colheres de sopa)
  • Molho de soja (2 colheres de sopa)
  • Molho de tomate (2 colheres de sopa)
  • Pimenta preta
  • Noz-moscada
  • Paprika

Modo de Preparação:


Comece por lavar bem a casca das batatas doce. Coloque-as num prato fundo, faça alguns golpes com um garfo, e leve ao microondas por 10 minutos na potência máxima, ou até conseguir perfurar facilmente o meio (o tempo de cozedura depende do microondas e de quão grande são as batatas doce). Quando estiverem prontas, retire-as do microondas e deixe arrefecer.

Entretanto, coloque água (cerca de 3 copos) a aquecer numa panela ao lume, para cozer as lentilhas. Quando a água estiver a ferver, coloque o caldo de legumes e 1/2 copo de lentilhas. Deixe cozer com a panela destapada, por cerca de 15 minutos, ou até ver que a consistência está boa (cozidas mas não empapadas). Quando estiverem prontas, escorra a água e reserve.

De seguida, descasque e corte a cebola e o dente de alho. Lve a refogar em lume baixo, numa frigideira larga, com um fio de azeite e uma folha de louro. 

Descasque as cenouras, lave os cogumelos e o aipo e corte tudo em pedacinhos. Junte ao refogado e vá mexendo sempre. Entretanto tempere com vinho tinto, molho de soja, molho de tomate, e as especiarias. Junte as lentilhas e deixe apurar, mas sem deixar que fique seco.

Por fim, corte as batatas doce ao meio e retire o interior com uma colher. Espalhe metade numa travessa de ir ao forno. De seguida, coloque o refogado de lentilhas, cenouras, cogumelos e aipo. E por fim, faça uma outra camada de batata-doce por cima.

Coloque no forno a 200º por mais 10 minutos. Sirva a acomparnhar com uma salada verde :) bom apetite!

Sweet potatoes and lentils "pot pie"

Portions: 4 Time: 1h Preparation: microwave, stove and oven Difficulty level: easy

Ingredients:

  • Sweet potatoes (2)
  • Lentils (1/2 cup)
  • Vegetable stock (1)
  • Onion (1)
  • Garlic (1 clove)
  • Olive oil
  • Bayleaf (1)
  • Carrots (2)
  • Mushrooms (~250g)
  • Celery (1)
  • Red wine (2 tablespoons)
  • Soy sauce (2 tablespoons)
  • Tomato sauce (2 tablespoons)
  • Freshly ground pepper
  • Nutmeg
  • Paprika

Preparation:


Start by washing the sweet potatoes' skin. Then, prick them with a fork, place them on a plate and take them to the microwave. They should be ready in 10 minutes on maximum power (but it depends on the microwave and on how big are the sweet potatoes). You can check if they're cooked by piercing them in the middle with a fork. Once they're ready, leave them to chill.

Meanwhile, heat up water (around 3 cups) on a pan, and add the vegetable stock once it's boiling. Then, add the lentils and let them cook for about 15 minutes (until soft but not mushy). Once they're cooked, drain the water and reserve it for later.

Then, peel and chop the onion and garlic. Put them on a large frying pan, with a bit of olive oil and a bayleaf, on low heat. 

Meanwhile peel, wash and chop de carrots, mushrooms and celery. Add it to the pan and let it cook, stirring occasionally. Finally, add the lentils, as well as the red wine, soy sauce, tomato sauce and the spices. 

Halve the sweet potatoes and take off the flesh with a spoon. Spread half of it on an oven dish, then add the lentils, carrots, mushrooms and celery mix. Top it with the other layer of sweet potato skin. Take it to the oven on 200º , for about 10 minutes.

Serve it with a green salad :) enjoy!

Massa com brócolos, tomates secos e pinhões 

Doses: 2 Tempo: 30min Preparação: forno e fogão Dificuldade: fácil


Ingredientes:


  • Brócolos (1 ramo)
  • Azeite
  • Limão (1 grande)
  • Azeite
  • Massa
  • Pinhões (1 xícara)
  • Tomate desidratado (300g)
  • Flor de sal
  • Pimenta preta
  • Alho em pó


Preparação:


Comece por lavar os brócolos e retire o caule principal. Depois, corte os floretes.

Passe um guardanapo com um fio de azeite numa travessa de ir ao forno, e disponha os floretes. Tempere com mais um fio de azeite, sumo de limão, flor de sal, pimenta preta e alho em pó. 

Leve a tostar ao forno por 20 minutos, a 200º.

Entretanto, toste os pinhões numa frigideira sem gordura, em lume baixo, até ficarem dourados. Reserve.

Retire o óleo dos tomates desidratados e corte-os em pequenos pedaços.

Quando os brócolos estiverem a metade do seu tempo de cozedura, cozinhe a massa de acordo com as instruções no pacote.

Quando a massa estiver pronta, escorra a água, e adicione os pinhões, tomates desidratados e os brócolos tostados à panela para que aqueça.

Junte um fio de azeite e sirva bem quente. Bom apetite!

Pasta with toasted broccoli, pine nuts and dry tomatoes


Portions: 2 Time: 30min Preparation: oven and stove Difficulty level: easy


Ingredients:

  • Broccoli (1)
  • Olive oil
  • Lemon (1)
  • Pine nuts (1 cup)
  • Dry tomatoes (300g)
  • Salt
  • Freshly ground pepper
  • Powdered garlic


Preparation:


Wash and cut the main stem of the broccoli. Then, cut the florets.

Put a bit of olive oil on an oven dish, use a napkin to spread it, and place the florets. Season it with another drizzle of olive oil, lemon juice, salt, pepper and powdered garlic. 

Let it roast in the oven for 20 minutes, at 200º.

Meanwhile, toast the pine nuts on a dry frying pan, on low heat, until golden brown. 

Also, throw away the conserving oil of the dry tomatoes and cut them into small pieces.

When the broccoli is half way done cooking, start on the pasta. Cook it according to package instructions.

When the pasta is done, dispose the water and add the cooked broccoli, pine nuts and tomatoes so they warm up a little.

Serve it while hot, and add another drizzle of olive oil. Enjoy!

Beringela com fatias de tomate e mozarela

Doses: 1 Tempo: 35min Preparação: forno Dificuldade: mais fácil é impossível

Ingredientes:

  • Beringela (1, grande)
  • Tomates (2)
  • Mozarela (1 unidade, ~125g)
  • Azeite
  • Orégãos
  • Pimenta preta

Preparação:


Comece por lavar os vegetais. De seguida, corte os tomates em fatias finas, assim como a mozarela.

Depois, passe um guardanapo com um fio de azeite numa travessa de ir ao forno.

Por fim, segurando no pé da beringela, corte-a horizontalmente em fatias quase até ao pé. Faça cerca de 5, 6 cortes (dependendo de quão grande é a beringela).

Abra a beringela em leque e coloque as fatias de tomate e mozarela entre as fatias de beringela.

Coloque mais um fio de azeite por cima e tempere com orégãos e pimenta. Leve ao forno durante 25 minutos, a 200º.

Eggplant with tomato and mozzarella slices

Portions: 1 Time: 35min Preparation: oven Difficulty level: as easy as it gets


Ingredients:


  • Eggplant (1 big)
  • Tomatoes (2)
  • Mozzarella (1, around 125g)
  • Olive oil
  • Oregano
  • Freshly ground pepper

Preparation:


Wash the vegetables.

Cut the tomato into thin slices. Do the same with the mozzarella.

Put a bit of olive oil in an oven dish and use a napkin to spread it.

Finally, to cut the eggplant, hold the stem and make horizontal cuts (around 6, depending on how big is the eggplant). Put it in the oven dish and open it like handheld fan. Then, add the slices of tomato and mozzarella in between the slices of eggplant.

Take it to the oven for 25 minutes, on 200º. 

Eat it while hot. Enjoy!

Massa com queijo azul e nozes

Doses: 2 Tempo: 15min Preparação: fogão Dificuldade: mais fácil é impossível

Ingredientes:


  • Massa (as quantidades dependem de cada tipo de massa; qualquer variedade serve)
  • Azeite
  • Queijo azul/Gorgonzola (150g)
  • Natas (25cl)
  • Nozes (50g)
  • Pimenta preta

Preparação:


Cozinhe a massa de acordo com as instruções na embalagem.

Enquanto a massa coze, corte o queijo em pequenos pedaços. 

Leve uma frigideira a aquecer em lume baixo com um fio de azeite. Quando este aquecer, deite os pedaços e mexa até começar a derreter. Aí, junte as natas e envolva bem.

De seguida, adicione as nozes previamente partidas e tempere como mais gostar (eu normalmente só ponho pimenta preta).

Sirva a massa acabada de fazer e coloque o molho de queijo derretido, natas e nozes bem quente por cima. Bom apetite!

Blue cheese and walnuts pasta

Portions: 2 Time: 15min Preparation: stove Difficulty level: as easy as it gets

Ingredients:

  • Pasta (the quantities depend on the type of pasta - but any type will do)
  • Olive oil
  • Blue cheese/Gorgonzola (150g)
  • Cream (25cl)
  • Walnuts (50g)
  • Freshly ground pepper

Preparation:


Cook the pasta according to the package's instructions.

Meanwhile, cut the blue cheese into bite-sized pieces.

Put olive oil on a frying pan, on low heat. Add the cheese pieces and, when it starts to melt, add the cream. Mix it together.

Finally, add the walnuts and season it as you like best (I normally just add black pepper).

Serve the pasta as soon as it finishes cooking and add the hot melted cheese, cream and walnut sauce. Enjoy!

Seitan recheado com ameixas

Tempo: 1h30 Doses: 2 Preparação: forno Dificuldade: fácil

Ingredientes:


  • Seitan (300g)
  • Alho (1 dente grande)
  • Massa de pimentão (3 colheres de sobremesa)
  • Azeite (5 colheres de sobremesa)
  • Limão (1)
  • Mel (2 colheres de sobremesa)
  • Ervas provençais (a gosto)
  • Pimenta preta (a gosto)
  • Noz-moscada (a gosto)
  • Ameixas pretas secas descaroçadas (100g)

Preparação:


Faça alguns cortes no seitan de forma horizontal, de maneira a conseguir retirar parte do interior. Reserve o seitan retirado.

Para a marinada, descasque e pique o alho Junte-o a uma taça grande com a massa de pimentão, o azeite, sumo de limão, mel, ervas provençais, pimenta e noz-moscada. 

Em seguida, corte o pedaço de seitan que retirou do meio em pedacinhos pequeninos, e integre-o na marinada.

Por fim, coloque o bloco grande de seitan numa travessa de ir ao forno e regue-o com o molho da marinada. Deixe marinar por 40 minutos.

Após os 40 minutos, recheie o seitan com as ameixas e leve ao forno a 150º, durante outros 40 minutos.

Sirva com os acompanhamentos que mais gostar (no meu caso foi maçã assada e cenouras-bebés). Bom apetite!

Nota: É possível que o seitan tenha tendência para ficar seco enquanto cozinha no forno. Caso aconteça, pode regá-lo com o mesmo molho que usou na marinada.


Stuffed seitan with dried plums

Time: 1h30 Portions: 2 Preparation: oven Difficulty level: easy


Ingredients:

  • Seitan (300g)
  • Garlic (1 big clove)
  • Red chili paste* (3 teaspoons)
  • Olive oil (5 teaspoons)
  • Lemon (1)
  • Honey (2 teaspoons)
  • Provencal herbs 
  • Freshly ground pepper
  • Nutmeg
  • Dried black plums, pitted (100g)


Preparation: 


Cut the seitan horizontally so you can pit it in the center. Spoon out the seitan you won't need and reserve it.

Peel and chop the garlic. Add it to a large bowl, with the red chili paste, olive oil, lemon juice, honey, Provencal herbs, pepper and nutmeg. Mix it together. This is will be your marinade.

Chop up the seitan you took from the middle into very small pieces and mix it in the marinade.

Put the big block of seitan in an oven dish and pour the marinade over it. Let it rest for 40 minutes.

After that, stuff it with the plums and take it to the oven for another 40 minutes, at 150º.

Serve it with side dishes you like best. Enjoy!

Note 1*: Red chili paste is something very used in the Portuguese cuisine. It has cooked red bell peppers, olive oil, garlic and salt.
Note 2: If you see that the seitan is getting dry, while cooking in the oven, you can use the same sauce you used for the marinade, to make it more moist.

Salada de inverno: legumes assados com parmesão e ovo cozido

Doses: 2 Tempo: 50min Preparação: lume e forno Dificuldade: fácil



Ingredientes:

  • Funcho (2 bulbos grandes)
  • Cebola roxa (1 grande)
  • Azeite extra virgem
  • Alho em pó
  • Pimenta preta
  • Espargos verdes (1 maço)
  • Ovos de galinhas felizes (3)
  • Queijo parmesão em lascas (a gosto)

Preparação:


Comece por cortar as partes verdes do funcho, e retirar o interior dos bulbos. De seguida corte estes em 4 partes. Descasque também a cebola e corte em 8 partes.

Numa travessa de ir ao forno, passe um fio de azeite e disponha os vegetais. Adicione outro fio de azeite por cima, alho em pó e pimenta preta. Leve a tostar no forno a 200º, por 40 minutos.

Entretanto, lave e corte a parte final dos espargos. Junte à travessa com os outros legumes a meio do tempo de cozedura (20 minutos). Adicione mais um fio de azeite, alho e pimenta.

Entretanto coza os ovos em água a ferver por 11 minutos. Deixe arrefecer, descasque e corte em 4 partes.

Quando os legumes estiverem tostados, coloque-os num prato fundo, adicione os ovos cozidos, e adicione queijo parmesão a gosto. Bom apetite! :)

Winter salad: roasted vegetables with Parmesan and hard-boiled eggs

Portions: 2 Time: 50min Preparation: stove and oven Difficulty level: easy


Ingredients:

  • Fennel (2 large bulbs)
  • Red onion (1 big)
  • Extra virgin olive oil
  • Powdered garlic
  • Freshly ground pepper
  • Asparagus (1 bunch)
  • Happy chickens' eggs (3)
  • Parmesan cheese

Preparation:


Core and chop the fennel into 4 wedges. Peel and chop the red onion into 8 wedges.

Add a drizzle of olive oil to an oven dish, display the chopped vegetables, top it with powdered garlic, pepper and another drizzle of olive oil. Take it to roast in the oven at 200º, for 40 minutes.

Meanwhile, wash and cut the roots of the asparagus. When the fennel and onion have been roasting for about 20 minutes, add the asparagus and season it with some more the olive oil, garlic and pepper.

Finally, prepare the hard boiled eggs (it will need about 11 minutes to cook).

Let the eggs cool down, peel it, and chop them into 4 wedges.

Place everything in a large plate and top it with Parmesan cheese. Enjoy!

Tofu em molho de soja e laranja

Doses: 2 Tempo: 40min Preparação: forno Dificuldade: mais fácil é impossível


Ingredientes:

  • Laranjas (3)
  • Molho de soja (4 colheres de sopa)
  • Alho em pó (a gosto)
  • Chilli em pó (a gosto)
  • Sementes de sésamo (2 colheres de sopa)
  • Tofu (200g)
  • Cebola (1/2)
  • Cenouras (2)
  • Curgete (1 pequena)
  • Pimento vermelho (1 pequeno)
  • Pimenta

Preparação:


Esprema as laranjas. Ao sumo, junte o molho de soja, o alho e chilli em pó, e as sementes de sésamo. Reserve.

Entretanto, corte o tofu em pequenos pedaços. Descasque e corte também a cebola e as cenouras. Por fim lave e corte a curgete e o pimento. Coloque tudo numa travessa de ir ao forno.

Tempere com o sumo de laranja e molho de soja, e adicione pimenta a gosto. Deixe cozinhar por cerca de 15 minutos, a 200.

Pode servir com mais algumas sementes de sésamo. Bom apetite! :)

Tofu in orange and soy sauce

Portions: 2 Time: 40min Preparation: oven Difficulty level: as easy as it gets


Ingredients:

  • Oranges (3)
  • Soy sauce (4 tablespoons)
  • Powdered garlic
  • Red pepper flakes
  • Sesame seeds (2 tablespoons)
  • Tofu (200g)
  • Onion (1/2)
  • Carrots (2)
  • Zucchini (1, small)
  • Red pepper (1, small)
  • Black pepper

Preparation:


Squeeze the oranges. Add the soy sauce, the powdered garlic, the red pepper flakes and the sesame seeds to the juice. Reserve.

Chop the tofu into bite-sized pieces. Peel and chop also the onion and the carrots. Finally, wash and chop the zucchini and the red pepper.

Place the ingredients in an oven dish and top it with the orange and soy sauce. Add some black pepper and let it cook for 15 minutes, at 200.

Add some more sesame seeds before serving. Enjoy!
