Barquitas mexicanas com feijão preto e pimentos assados
Tempo: 15min Doses: 2-3 Preparação: forno Dificuldade: mais fácil é impossível
Ingredientes:
- Cebola (1/2)
- Tomate (1 grande)
- Alho (1 dente)
- Barquitas mexicanas (8, utilizei as de Old El Paso)
- Feijão preto (~200gr)
- Pimentos mistos assados (~100gr)
- Malagueta (1 grande)
- Limão (1)
- Pimenta
- Paprika
- Alho em pó
Preparação:
Corte a cebola, o tomate e o alho em pedaços pequenos. Coloca-los em 6 das 4 barquitas mexicanas, assim como o feijão preto e os pimentos assados. Misture os ingredientes.
Pique a malagueta e distribua pelas várias barquitas. Tempere ainda com pimenta, paprika, alho em pó e sumo de limão.
Leve as barquitas ao forno por 10 min, a 200º.
Utilize as últimas duas barquitas para fazer quesadillas (receita aqui).

Mexican barquitas with beans and peppers
Time: 15min Portions: 2-3 Preparation: oven Diffculty level: as easy as it gets
Ingredients:
- Onion (1/2)
- Tomato (1 big)
- Garlic (1 clove)
- Barquitas mexicanas (8, I used the ones from Old El Paso)
- Black beans (~200g)
- Roasted peppers (~100g)
- Lemon (1)
- Chilli
- Pepper
- Paprika
Preparation:
Cut the onion, tomato and garlic into small pieces. Put them in 6 of the 8 barquitas, as well as the black beans and roasted peppers. Mix the ingredients together.
Season it with the spices, chilli and lemon juice, and take it to the oven for 10 minutes, at 200º.
Use the last 2 barquitas for quesadillas (smash one riped avocado, season with garlic and lemon juice - that will be your guacamole. Put one layer of guacamole and another of grated cheese and let it cook in the oven until melted).
